Do any S15s have open diffs?

Depends what you want from a diff. If you want to drift, the Viscous is easier. If you want to stay on the road, the Helical is better.

The issue that's been made is that the JDM Spec S had no diff as standard...

well i'm no drifter for sure but if i could get one which would behave like the one in the corolla gt coupe ae86 i used to own i'd be happy. i hate the wet at the moment as the car is all over the shop, oversteer is a problem. i just like more control and to be able to do a dough nut now and then. will a heli allow me to do is if so i'm driving to euro auto sal for one

yeah but i'm not sure if i'm ready for two way yet i drove supra the other day and it had a two way and that will take getting alot of used too
